Although she did not speak the language this presented no barrier for her.  She easily adapted to life in the U.S. by way of her loving, endearing, kind and generous nature, which needs no language.  She became a loving steward of Holy Trinity Greek Orthodox Cathedral sharing her amazing culinary talents by helping prepare pastries for the Greek Festival, which she looked forward to each year.  She was also an active member of the Daughters of Evrytania.  The most important moments in her life were spent with family, especially her grandchildren and great grandchildren.

Eleni is survived by her daughter, Voula Pappas and her husband, Mike; son, Bobby Tsiabassis and his wife, Frances; her grandchildren, Dino Pappas and his wife, Maria, Tommy Pappas and his wife, Georgina, Nicholas Pappas and his wife, Kontilo and Leah Tsiabassis.  Also surviving are her sister, Vasiliki Liapis of Athens Greece, as well as eight great-grandchildren, Sam and Evi Pappas; Mitchell, Eliana, Vivienne and Eve Pappas and Charlie and Kosta Pappas, and many nieces and nephews.  In addition to her husband, Athanasios, she was preceded in death by her parents, Nikolaos and Spyridoula Pistiolis Kokotini and her two brothers, Athanasios and Vasilios Kokotini.

Funeral services will be held at 11:00 AM on Tuesday, January 16, 2024, at Holy Trinity Greek Orthodox Cathedral in Charlotte, NC.  The family will receive friends in the Cathedral one hour prior to the service. Interment will follow at Evergreen Cemetery.
